Bacon Wrapped Filet Mignon

Bacon Wrapped Filet Mignon

Ingredients:
  • 6 oz. bacon Wrapped Fillet Mignon
  • Butter
  • Cooking Oil
Preparation:
A great alternative to grilling or broiling filets is to sauté them in a very small amount of oil. (You may want to use a combination of butter and oil for additional flavor.) Thawed six ounce filets will take approximately 3 minutes per side over a medium-hot burner for medium-rare.

 



Lemon-Butter Herb Chicken

 
Antibiotic Free Cutlets

Ingredients:

1 Stick Butter

1 1/2 Tablespoons lemon-herb chicken sauce mix

2 Tablespoons lemon juice

4 Horizon Antibiotic Free Chicken Cutlets

Garlic Salt, to taste

Lemon Pepper, to taste

 

Preparation:
In a small pan over medium heat, melt butter. Stir in sauce mix and lemon juice. Cook 1 minute. Remove from heat, set aside. Rinse chicken with cold water and pat dry. Season with garlic salt and lemon pepper. Grill chicken on preheated grill for about 6-8 minutes per side. Baste cutlets fequently with the sauce mix.



Tilapia With Coconut Milk

Tilapia

Ingredients:

Vegetable Oil
4 Horizon Tilapia Filets
1 Lemon, zested and juiced
1/2 Pound snow Peas
4 Small red potatoes, quatered sliced into 1/4 pieces
1 cup coconut milk.

Brown Paper Bags

Preheat oven to 350 degrees
Brush paper bags with vegetable oil until they are well coated all over. Set aside. Season the fillets with salt, lemon zest and juice. Top each with 5 or 6 snow peas and one of the thinly sliced potatoes. Transfer each fillet into one of the bags and pour about 1/4 of the coconut milk into each bag. Fold well to seal in the juices and steam. Place onto two rimmed baking sheets and bake until bags are puffed and fish and potatoes are tender, about ten to fifteen minutes. Serve in puffed bags or transfer each to a plate.




Fiesta Pork Filets

Boneless Pork Chops

Ingredients:

4 Boneless Pork Chops
2 small baking potatoes, quartered
2 small green bell peppers, sliced
Salsa
2 tablespoons vegetable oil
1 (1.25 ounce) package Fajita or Taco Seasoning Mix
sour cream
1 medium onion, coarsely chopped
Preparation:
PREHEAT oven to 400 F. Line roasting pan or 15 x 10-inch jelly-roll pan with foil. PLACE boleless chops, potatoes, bell peppers, onion, oil and seasoning mix in large, heavy-duty plastic bag; shake to coat. Place boneless chops in prepared pan. Arrange vegetables around chops. BAKE, stirring vegetables halfway through, for 40 to 45 minutes or until an internal temperature of 170 F. and potatoes are tender. Let stand for 5 minutes before serving. Garnish as desired with salsa and sour cream.



Frenched Rack Of Lamb

Frenched Rack of Lamb

Ingredients:
2 cooked (any method) lamb racks
2 cloves garlic, chopped
1/4 cup olive oil
1 tbs. chopped parsley
seasoned bread crumbs
Preparation:
Sauté 2 cloves of chopped garlic in 1/4 cup of oil. When garlic is golden brown, remove from heat and add 1 tbs. chopped parsley and enough seasoned breadcrumbs to absorb the oil and form a thick paste. When the lamb is cooked, apply the breadcrumb paste to the fat side of the rack and place under the broiler until golden brown.
